“Beep beep’m beep beep yeah” | I FINALLY passed!

This time last week I was plodding about the house… already getting nervous about Thursday. For Thursday I would be having ANOTHER driving test. I hadn’t told anyone when my test was (aside from work). Mr Memoirs didn’t even have a clue. I have a terrible habit of getting myself worked up over things. I’ve always been a worrier. More so since having Eli of course, but still, I worry needlessly. Much to my disadvantage when I have an impending driving test!

After all these years of not driving… and not even wanting to drive, to it becoming such a necessity in my life that I was without. It wasn’t just the umpteenth walk up to the ‘local’ hospital for Eli’s physio appointment, or the walk up to Sainsbury’s for the second time that day, for the million things I’d forgotten (and having to cart it all back on the back of the pram)… or the fact I was trekking 2 HOURS every day to get Eli to nursery and back. It’s so much more than that. It’s the freedom to whisk my family away if need’s be. To be able to do things my friends do; and not miss out because the car seat would be a problem. Of course, I really wanted to be without the trek to the nursery. Nobody want’s to walk 2 hours every day in the howling wind and rain (granted, it was a lovely walk when the sun shone, but since July the path has been treacherous to say the very least – thank you Brentwood Council for making a massive pig’s ear of your roads – which in turn, made a massive pig’s ear of the path!). We’re free – as a family. And that’s so exciting.

I honestly cannot believe it. It feels very surreal.

My first drive was the nursery run. I felt liberated and a nervous wreck. I parked 5 minutes walk away in a pub car park because the nursery forecourt is a driving nightmare. Picking Eli up on Friday felt amazing. I did feel like I was an illegal driver however, and it really felt like all the other drivers KNEW I was new to the roads… it’s like they were all looking at me in my car. So very strange. I know they weren’t looking, at all!

The car still feels very big and I must have stalled about 40 times in the 6 drives I’ve done (mostly trying to get off the drive – it’s a hill). But all in all, I *think* I’m getting there. I CAN drive. I AM a driver. And that feels nice.

NB: I took 5 driving tests. Proof that you shouldn’t ever give up – if you want something, you will achieve it, eventually. Also, Brentwood Test Centre has a pass rate of 36% – they’re ridiculously harsh; to the point that I was failed on my last test because I wasn’t dramatic enough with how I was making observations – the examiner agreed that during the “incident” in question, I “did look”, it just wasn’t “obvious enough”.  I’d failed my previous tests for similar issues. I knew I was a good driver at heart, I let the nerves get the better of me, but this time I wasn’t going to be beaten! Plus my Provisional License was due to expire in October this year and I sure as hell was not going to get that renewed – I NEEDED that Full License! And I got it! DON’T GIVE UP – KEEP ON PLODDING! And you never know, if you’re taking your driving test as a ‘mature student’ like I was, maybe you might have a nicer test centre who appreciate how difficult it is to not be that ruthless and overly confident 17 year old! I will keep my fingers crossed for you. 

The Big Feastival 2014 | We’re ACTUALLY going!

I enter competitions on a whim. I forget about them. I entered The Big Feastival competition via the Jamie Oliver ‘Gold Club’ back in December… at the time, I remember saying to Mr Memoirs, “We should keep that weekend free, just incase!”. His obvious reaction was “No need, we never win anything…”. He’s eating those words right now, because I DID WIN!

We’re so so excited, I can’t even put it into words! And that is saying something.

I’m even excited about the camping part! Which is DEFINITELY saying something.

We’ve always wanted to go to The Big Feastival – as we’re huge fans of Jamie Oliver, and Alex James fan’s to boot (I was always on team BLUR, of course). This is literally the perfect festival for us, especially with Eli in tow too. It’s hugely family-friendly (heck, Justin Fletcher A.K.A Mr Tumble and actual Mr Bloom swoon are there too!). There are dozens of activities and area’s to keep little ones entertained. Plus, and most importantly, this is a foodie festival. With all our favourite chef’s in attendance! The marketing team at Jamie Oliver have been absolutely fantastic. They’ve been super swift to reply to any queries we’ve had and have kept me up to date with everything. The tickets landed on my doormat this morning, giving me a new lease of excitement – WE’RE ACTUALLY GOING!

So – what’s the plan when we get there?

Well, we’ll unload the car and get the tent up as soon as possible – and get settled in! We tested the tent a few weekend’s ago and it was super easy to assemble – which is good news because I would get bored so quickly otherwise! For the first time ever, we also have a camp bed; there was no way we could sleep on the actual floor for a few nights (we literally have the bones of elderly people!).

We’ll then head into the festival, which open’s at 11am!

We’re really looking forward to seeing presentations/tasting’s with our favourite Chef’s, as well as joining in all the toddler activities we can feast on! Eli is very, very good with his food, so we’re certain he’ll get stuck into munching whatever he can. As reader’s of my blog, and friends of mine IRL, will know, I’m massively mildly obsessed with Little Bird by Jools. Basically, there is little else that I will dress Mr Eli in, other than Little Bird. It is my imaginary children’s fashion made reality (and probably better than my imagination to be honest!). And guess what? Little Bird will be at The Big Feastival too! Last year there was even a catwalk (I can’t cope!), which I’ll so be FROW of with Eli. Hoping he doesn’t gatecrash though – I know he has a soft spot for Jools and her design’s too! I’m literally so excited I can’t even contain myself!

So the countdown is officially on, now that tickets are in hand! T-minus 13 day’s! This weekend we’ve bought Eli some new threads to keep him cool or warm and dry across the Big Feastival weekend. That’s the only trouble with a British festival, you really need to pack for ALL weather! I’m certain we’ll have an amazing time whatever the weather will be. There are adventures and memories to be made… and that’s the main thing.

Sadly, at the minute there are only 3 ages for boy’s, but I’m sure Belle & Boo will have a great response to the cards and will hopefully extend the range. The “Ellis & Easy” badge card we bought for Eli is so charming and playful. We’re big aeroplane fan’s in our house, so this card was perfect for Eli (who will also be going on a plane for the first time very soon too!). What’s more, the badge is a safety badge, so you can let your little one show off their big age without the worry of them being covered in pin-pricks!

Recipe | Banana Loaf? Banana Bread? Banana Cake? … whatever you like to call it!

One of my favourite things to do is cook and cooking/baking with Eli is double the fun! Eli has Wednesday’s off from nursery, so Wednesday is OUR day. We usually do fun things like go to the local play group, paint or bake. Or as last Wednesday would have it, all three – and more!

I had 2 very over ripe banana’s – which is often the case. So one of my favourite things to do with those banana’s that are well ‘past it’, is to make this delicious Banana Loaf. I call it Banana Loaf, but I know people who fondly refer to it as Banana Cake or Banana Bread. Whatever your preference, this is a fail safe, incredibly yummy recipe! I have adapted the recipe, from Mary Berry’s “Baking Bible” and added a little secret ingredient at the end, which I know goes down very, very well with my family! There’s usually very little left after it’s been freshly baked… but it does have a good shelf life if you can resist the temptation of eating it all in one go!

BANANA LOAF*

Ingredients.
100g Softened Butter
175g Caster Sugar
2 Eggs (I used Medium, but Large is the preferred if you have them in!)
2 Ripe Bananas (mashed)
225g Self Raising Flour
1 Tsp. Baking Powder
2 Tbsp. Milk

Optional.
Sea Salt (I use Maldon Sea Salt Flakes).

Method.
1) Preheat the oven to 180C / Fan 160C / Gas 4.
2) Lightly grease a 2lb loaf tin, then line the base and sides with baking parchment.
3) Measure all ingredients into a mixing bowl and beat for about 2 minutes, until well blended.
4) Spoon the mixture into the tin and level the surface.
5) Here comes my secret ingredient! I love to sprinkle sea salt flakes over the top before popping the tin into the oven. It adds texture and has such a nice contrasting taste to the crust. It’s very well received by those who have eaten this finished product!
6) Bake in the pre-heated over for about 1 hour, until well risen and golden brown. A fine skewer inserted in the centre should come out clean if the loaf is ready.
7) Leave to cool in the tin for a few minutes, then turn out, peel of the parchment and finish cooling on a wire rack.

Honestly, one of the easiest recipes to bake. Always tasted. Always works! Perfect for using up those miserable looking banana’s to boot! You can of course always add sultana’s or even chocolate chips to the cake batter. It’s a very adaptable recipe!

We were walking back from an afternoon at the local park. Eli was obsessed with the big boat, that is on springs, kind of bouncy-see-saw-thing. It doesn’t do an awful lot, but it definitely captured Eli’s imagination.

I actually adore Little Bird at Mothercare. As mentioned, several times, we look like we live in the 70’s, so Little Bird ensures we all match!

Recipes | Split Red Lentil Dahl.

Yesterday was our 5th Fast Day. And it went surprisingly well. It definitely get’s easier… infact, I look forward to our Fast Day, as we’re trying such lovely recipes – and the added bonus is,  I wake up the day after a fast feeling great – feeling lighter and brighter. I wish the scales would actually ring true with the lighter part though, as I’m not seeing a huge difference. I’ve seen how some people have lost 10 – 14lbs by their 3rd week of fasting. I’m so far only seeing a 3lb drop. But still, that is a 1lb per week I guess and not to be sniffed at. I guess I’m just being inpatient!

SO! Yesterday was a fast day, as I say. And I made the most wonderful red lentil Dahl! The first time I’d ever made a Dahl… and dare I say it, the first time I’ve ever actually eaten one too! So only going on how mine turned out – but it was super yummy, warming and filling – just what you need on a Fast Day! I was inspired by several Dahl recipes that I found online. I loosely followed this recipe from the wonderful London-Unattached. But as Fiona mentions in her post, most Dahl recipes are more or less the same – just depends on what veg/meat you want to add! Our recipe was meat-free last night. This recipe would be awesome during the cold Winter months too – you can throw in so many things to bulk it out, while it will still remain very healthy.

SPLIT RED LENTIL DAHL*
SERVES 2 – PREP 15 MINS – COOK 20 MINS
300 Calories, per portion.

Ingredients.
90g Sainsburys Dry Red Lentils
100ml Knorr Vegetable Stock
1 tablespoon Tomato Puree
2 Medium Tomatoes, chopped into chunks (can be skinned before chopping if you prefer)
2 teaspoons Cumin Seeds
1 teaspoon Ground Tumeric
1/2 teaspoon Mustard Seeds
1 large clove Garlic (I pushed through a garlic press, but can be sliced or grated)
1/2 teaspoon Waitrose Hot Chilli Powder (Or one fresh chilli. Adjust according to taste – the Waitrose Chilli Powder is so powerful, you don’t need a lot! And I like heat!)
2 teaspoons Ginger (I chopped as I like to taste ginger, but can be grated)
1 Medium Onion (Finely Sliced)
3 Spring onions (I had leftover in the fridge)
1 Red pepper (I had leftover in the fridge)
150g Spinach (Torn or roughly chopped)
Splash of Rapeseed oil

Optional – to garnish.
Parsley
1 tablespoon Low Fat Yoghurt
Sliced cucumber

Directions
1) Cook lentils as per packet instructions. For the Sainsbury’s lentils I used, I boiled them rapidly (in cold water) for 10 minutes. Drained and set aside.
2) Add some oil to a frying pan and add the dry spices and cook over a medium heat till the mustard seeds start to pop. I used Rapeseed oil, but know that a lot of people use coconut oil as an even healthier alternative.
3) Add the onion (and spring onions), garlic and ginger and cook gently for 3-5 minutes till the onion starts to soften. Then add the cubed peppers (I just had a pepper leftover in the fridge).
4) Add the tomato puree, stock, fresh tomato and simmer for 15 minutes stirring occasionally and adding more water if necessary
5) Stir in soft lentils and the spinach and cook for a further 2-3 minutes
6) Serve garnished with a dollop of Low fat yoghurt, sliced cucumber and a sprig of parsley (or coriander would work well too).

Recipes | Harissa Chicken and Bulgar Wheat Salad.

We’d tried this lovely Harissa Chicken and Bulgar Wheat salad a few times, from the Hairy Bikers ‘Hairy Dieters’ cookbook before we even knew about the 5:2 diet! It really is a delicious, well rounded meal – very tasty! And better still, it’s very filling – just what you need on a Fast Day! This cookbook is perfect if you’re also undergoing the 5:2 diet. A lot of the recipes are under 300 calories! So perfect for Fast Day’s.

So here is the recipe!

HARISSA CHICKEN AND BULGAR WHEAT SALAD*.
SERVES 4 – PREP 15 MINS – COOK 20 MINS
270 Calories, per portion.

Bulgur wheat salad:
100g Waitrose bulgur wheat
150g  cherry tomatoes, halved or quartered if large
1/4 cucumber, diced
4 spring onions, trimmed and finely sliced
1 garlic clove, peeled and crushed
Small bunch of flat-leaf parsley (about 10g), plus extra to garnish
Small bunch of fresh mint (about 10g)
Finely grated zest of 1/2 unwaxed lemon
Freshly squeezed juice of 1/2 lemon
Freshly ground black pepper
Harissa chicken:
4 boneless, skinless chicken breasts
1/2 tsp sunflower oil
1 tbsp Harissa paste (preferably Tose Harissa, I used Waitrose Ruby Rose Harissa).
Lemon wedges, to serve

1) To make the salad, rinse the bulgur wheat in a fine sieve and tip it into a medium saucepan. Cover with cold water and bring to the boil, then cook for about 10 minutes until just tender, or follow the packet instructions. Rinse the bulgur in a sieve under running water until cold and leave to drain.

2) Tip the cooked bulgur wheat into a large serving bowl and add the tomatoes, cucumber, spring onions, garlic, parsley, mint, lemon zest and juice. You’ll need about 3 heaped tablespoons of each herb once chopped. Season with lots of freshly ground black pepper, toss everything together well and leave to stand while you cook the chicken.

3) Place each chicken breast between 2 sheets of cling film and beat with a rolling pin until about 1.5cm thick. You need to make the chicken breasts about the same thickness so they cook evenly.

4) Brush a griddle pan or non-stick frying pan with a little oil and place over a medium-high heat until hot. Griddle or pan-fry the chicken breasts for 2 minutes, then turn them over with tongs and cook on the other side for another 2 minutes.

5) Brush the chicken breasts with half of the harissa on 1 side only and turn over. Cook for a minute while brushing the reverse side with the remaining harissa. Flip over and cook for a further minute or until cooked through. Check that there is no pinkness remaining.

6) Transfer the chicken to a board and leave to rest for 3–4 minutes before serving. Garnish with extra parsley and the lemon wedges and serve hot with the bulgur salad.

As most people know, my obsession with Little Bird by Jools Oliver is ever-growing. I literally ADORE all of the clothing; boys and girls clothes! (I may only have a boy, but I can still look at the girls clothes, can’t I?! Faaaaar too cute!) Our house looks like it’s straight from the 70’s and now my little boy does too – and I absa-bloody-loutely love it!

One of my favourite Little Bird recent purchases are these buckle shoes – or ‘proper boy shoes’ as I tenderly refer to them. Quintessential boy’s shoes. Classic boy’s shoes.

As with any shoe purchase for Eli, I need to make sure that the shoe is comfortable, fits well and need to see Eli walking in them – so I can assess that they will support his feet and ankles due to his Talipes. These shoes are just perfect. They’re padded inside and are leather, so will naturally mould to Eli’s foot shape over time. Eli has run rings round me wearing these shoes, so I know he definitely has happy feet when he’s got them on!

This shoe style does come in a stunning red colourway too – which I’m tempted to also buy, despite the floral sole!

The 5:2 Fast Diet | And so it begins…

I’m rubbish with diets. I like food and wine far too much. I don’t really exercise; but I do walk 2 hours a day, everyday, to take Eli to nursery and back. So I’d say I’m lightly active. I’ll be honest here, because I think it’s important, I need to lose around a stone. Maybe even a little more. I feel dreadful. I’m exhausted, I’m sluggish, I’m bloated – and for some reason have recently acquired a sweet tooth. The 5:2 diet is brimming with health benefits, as well as the incredible weight loss results. Without going into the massive science and logic behind the diet… it sounds like the perfect for us. Due to work, I barely have lunch until 2/3pm anyway and we never have our tea before 8:30/9pm due to it taking Mr Memoirs so long to get home. We I do however have trouble with portion control – I cook for a family of ten, so we eat for a family of ten! Always have.

A friend had started the 5:2 diet a few weeks ago and has had great results so far. It took a while for me to get my head around it. Giving up food for an entire day, not once, but twice a week? NO WAY, GET REAL. No way could I do that! But actually, as a female, I get 500 calories for my fast day. If you’re lucky enough to be male, you get 600 calories. Bonus round. It doesn’t sound like a lot – but if you’re clever, and make the right choices, you can actually still have 3 meals a day! YES WAY!

Yesterday was my first fast day. It is advised by fellow 5:2’ers that you try and miss breakfast (I know, it goes against everything you’re taught growing up!) and try and last as long as you can throughout the day without food. Meaning you have more of those important calories left for your evening meal. I’m already a massive water drinker. I don’t drink tea or coffee. I don’t drink fizzy drinks. So at least I don’t have to give extra’s like that up. I kept gulping down the pints of aqua till around 12, when I quite literally felt like my stomach was eating itself. I also had a headache. Not wanting to ‘waste’ my valuable calories on paracetamol, I opted for a 13 cal beef OXO cube drink! This replaced the salts that my water intake may have been taking away. I somehow, managed to get to 3:30 and had my Knorr soup, 172 calories. I then had a medium-banana on my way to pick Eli up from the nursery, a around 89 calories. And for my big meal of the day, we had the below – Halloumi salad, at 215 calories, at 9pm. I don’t think I’ve enjoyed agsalad so much in all my life. I will be continuing to collate 5:2 recipes over on my Pinterest, here >> 5:2 Diet Recipes. I had a total of 489 calories yesterday and I SURVIVED! I feel proud to get through Day 1 of fasting.

Halloumi Salad, by 5:2 Recipes Blog. Serves 1, 215 calories.

This is by far the most yummy salad I’ve eaten… I’m not sure if it was because I was so looking forward to my evening meal though! But it was delicious, calorie counting or not. You could easily slip some chicken in there to bulk it out. But it was zingy and filling – am looking forward to having this again!
